Happy new year's punch
Punch out the old year with a traditional new year's punch.
Ingredients:-
2 lemons (I use fairly large ones)
2 Pints of ale. Homebrewed ale is great as they usually have plenty of malt and hops to add to the flavour. Even supermarket canned ales will work well.
1/4 pint of brandy
3 fl oz rum
1 fl oz gin
2 oz Demerara sugar
1 pint of water (Aprox. My wife tends to use less water but then she uses smaller lemons. I tinker with this recipe by replacing some of the water with fruit juice. Experiment with a small quantity first)
1/4 level teaspoon of powdered nutmeg
1/4 level teaspoon of cinnamon
Directions:-
Peel the lemons thinly and squeeze out the juice. Place the lemon peel and lemon juice in a large pan. Discard the rest of the lemon. No add the rest of the ingredients leaving the water and sugar till last. You can adjust you recipe to taste by changing the quantities. Add more or less water / sugar to suit what you think your guests and you prefer. If you substitute some of the water for fruit juice then you may need less sugar.HAPPY NEW YEAR and do not forget to visit the hangover page before rather than after the party. Prevention is better than cure.
Punchy Tea
Hot and very refreshing - Something for the drivers.
Ingredients:-
4 pints of water
1/4 pint orange juice
juice from 2 lemons
6 whole cloves
Cinnamon stick about 2 inches (More or less to taste)
1 oz of a good quality loose leaf tea
Approx 4 oz white sugar
Cinnamon sticks to serve with the tea
Directions:-
First into the punch bowl add the orange juice, lemon juice.
Into a large pan pour the water and add the six whole cloves. Bring the water to the boil. Once boiled then remove from heat. Add the tea leaves and allow to infuse for about five minutes. (Do not over do it as stewed tea can be a bit bitter) Once the tea has infused pour into the bowl (that already has the orange and lemon juice). Sieve out the tea leave as you pour. Stir and add sugar to taste, make sure the sugar dissolves.
To make sure that driver's do not get the wrong drink I never have their punch bowl in the open where they could choose the wrong one or the odd vodka can be added to theirs by a misguided guest. I always take their orders just like making a cup of tea and then make this alcohol free punchy tea and pour their cup directly from the bowl as soon as it is ready. I adjust the amounts to suit the order so none is left.
